This section will show you how to make a perfect rice (fried) plus regular rice, a joy even when eaten plain.

BASIC RICE FORMULA:

1 CUP:

1 cup long grain rice
1 3/4 cup cold water

2 CUP:

2 cup long grain rice
3 cup cold water

3 CUP:

3 cup long grain rice
3 3/4 cup cold water

Remember to much water when cooked away will also soften the rice taking away from its flavor.

Add rice and cold water to pot. Bring to boil uncovered and let boil, when holes appear in rice cover and lower gas to lowest point and cook 8-10 minutes. Take off burner and let stand in back of stove till read y to serve.

NOTE: 3 cups rice needed for fried rice

If rice is used for fried rice, empty the rice into a roasting pan and let it cool to room temperature. when cold put into plastic bag and freeze overnight. Take from bag, put back into pan and break it up until all smooth and then its ready for fried rice. (The freezing part should be done a day or two before needed.)
